Tricky dimensions to choose without seeing your frame, but I'd recommend size XS rather than S.

IMO it's better for your spats to be a tiny bit short, but the proper compression... versus picture perfect length, but too loose.
Also the spats are somewhat generous in length so I wouldnt be too concerned about them being too short if you get XS at 5'8".

If your legs are thicker than the average 210 lbs bloke then I'd recommend going for size XL.
For reference, male model is 165 lbs wearing size Medium.

It is one unit of spats lol. People refer to spats in the same way they might refer to pants / jeans.

E.g. "I brought my favorite pair of blue jeans" and "BJJHQ is selling a super-hot-fire pair of spats today"
